Chicken pies - one of dad's favourites :)

Chicken pie is comfort food in my family - its warm flaky crust and creamy filling has always had a heartwarming effect on me, and especially my dad :)

He often ask if i would be making chicken pies soon. And on days like these, i would happily report that there are 'already in the oven!'.

i am more used to making this in family size - in a big pie pan where everyone digs in together :)
This time, i am making these in nice individual teatime or supper sizes.

A rather simple pie filling

Off these go into another round of baking with their lids on...
It is quite an enjoyment watching the crust bubbling in the oven and slowly taking on a golden brown sheen.
